Ethiopian Cooking: Dabo Kolo
I've been making this spicy snack treat which is traditionally given to travellers as a parting gift. Dabo means bread and Kolo roughly translates as popcorn which describes it well, and compliments tea or coffee. It's very easy to make and prepare...if you have the patience for cutting rolled dough into small pieces! I have put the recipe I use below, it will make a generous medium sized helping but
feel free to increase/decrease to suit your needs.

Dabo Kolo
500g Flour
1 cup of Oil
1 cup of Water
1.5 tsp Baking Powder
1.5tsp Salt
1-2tsp Mitmita or Cayenne Pepper
Half a cup of Sugar
In a bowl put flour, baking powder, salt, sugar and spice then mix together with the oil and water with your fingers until a stiff dough.
Take a piece the size of a ping-pong ball and roll it into a tube the thickness of a pencil.
Cut with scissors into small pieces and put on a tray to dry out (otherwise it will absorb too much oil during cooking)
Pre-heat oven to 180c (fan assisted) and bake for 15-20mins until light brown, stirring pieces on the tray 3-4 times during baking to ensure even colouring.
